A Little History

Sushi and some other Japanese foods started to grow popular in Australia the late 1980s. But the history of sushi goes back many centuries, where it developed in China rather than Japan.

The precursor to sushi developed in china around the second century AD. Fish was fermented in rice as a means of preserving it. The rice was thrown away when the fish was finally eaten.

By the seventh century this fish preservation method had spread to Japan, where seafood was a staple part of the diet. The big change was that the Japanese ate the rice with the fish. This remained popular for several centuries for both the taste and the convenience of preservation.

The attitude to preservation changed in the 17th century. People discovered that the taste of sushi could be achieved without fermentation. The taste of sushi could be reproduced by adding rice wine vinegar to fresh fish and rice. This meant that sushi could be prepared very quickly there was no need to wait months for the fish to ferment.

By the late 19th century sushi was being sold in street stalls as a snack. It was the ‘fast food’ of the day.
